These are some general guidelines for a Candida Diet. They are inspired by the work of Dr. Crook (and will be updated as soon as I can consult with his book), and they were prepared with the help of Philip Starkman (416 410 0251).
no refined products/ no processed foods no milk or dairy care is needed with the selection of foods high in carbohydrates. Carbohydrates should be reduced so eat green leafy vegetables. Observe moderation with root vegetables and pulses (which are high in carbohydrates - but have a low glycemic index). Pay attention to the "glycemic index". Eat foods with a low glycemic index. grains are to be avoided. no red meat or poultry. fish is fine - except: of you wouldn’t drink the water, don’t eat the fish. most candida diets stress that fermented products should be avoided. This certainly cannot apply to food fermented by lactobacillus such as saurkraut. I don’t actually understand... (or if I do understand it, then I don’t agree with) the rational behind avoiding fermented foods. My colleague, Phil Starkman, has likewise had success with candida diets that do not exclude fermented foods. Nonetheless you will need to avoid breads, beer, wine, etc, because of their high glycemic index! eat lots of garlic. no caffeine
